There are few foods that transcend all culinary differences to become an iconic symbol of comfort across the globe, but there is one stodgy, cheesy, pasta-y marvel that is adored by everyone, everywhere. No exceptions. We’re talking of course, about mac ‘n’ cheese. (Note: If you don’t like it, we no longer consider you human) Though deceptively simple with its innocuous cheese, bechamel sauce it is in fact one of the most adaptable flavour bases out there, something top chefs around the world haven’t failed to notice. Modern takes on the classic have been popping up at Michelin starred restaurants everywhere with people deconstructing, liquifying and foaming the hell out of our beloved dish.

Never fear. We’re still a bunch of unadventurous homebodies who staunchly hold that a true mac ‘n’ cheese needs to be a solid cheesy bowl of goodness and that Kraft is culinary genius. However in an attempt to broaden our horizons we went in search of Mumbai’s oddest offerings and return triumphant with 7 of the city’s strangest but most delectable takes on our old friend. So next time you’re in need of cheesy comfort, you know where to look.

I. Jalapeno Mac ‘n’ Cheese - Social

Where: Multiple outlets across Mumbai

Social prides itself on its range of signature cocktails but you’ll be needing something to sop up those excesses and look no further than their take on the pasta classic. They went with the classic cheesy recipe and then spiked it with a handful of jalapenos to keep you on your toes, topping it off with a parmesan, herb crumb crust for a nice textured bite. What more could you need after a long night out?

What it will cost you: A mere Rs. 320 for a substantial portion...that leaves you with spare change for a nightcap.

II. Mac & Cheese Cone - The Conical Twist

Where: Bandra West

For the days you can’t quite decide what you’re craving The Conical Twist always has the answer. Their ethos is simple - everything’s better in a cone. They have plenty of unique taes on popular pizza toppings available but for the ultimate carb fest try their Mac & Cheese Cone. It comes in a simple original version or an amped up pesto version with pesto sauce and black olives. If you’ve ever lamented that you can’t have your favourite dish on-the-go, here’s the solution!

What it will cost you: Both versions will cost you Rs. 150 but you know you’ll want more than one.

III. Mac ‘n’ Cheese Pizza - Fat Man’s Cafe

Where: Reclamation

If it’s a light lunch you’re out to find, turn away now. In a beautiful, oozy marriage of Italy’s favourite fare, pasta and pizza merge into one unholy union. And we love it. This is the ultimate cheese overload with both elements giving you more than your fair share along with onions, garlic chedder, herbs and another helping of mozzarella. Bring your appetite for this one because after a few bites, it’s going to be an uphill battle.

What it will cost you: A bit pricier than your ready to make packets at Rs. 525

IV. Prawn Mac ‘n’ Cheese - Smoke House Deli

Where: Bandra, Bandra Kurla Complex, Lower Parel

Smoke House Deli is well known for it’s impeccable takes on old favourites and yet again, they’ve struck gold. Prawns can be a pretty divisive protein but here it’s sure to be everyone’s favourite with the delicately cooked shellfish melding perfectly with a traditionally cooked mac n cheese. If you aren’t feeling too adventurous you can replace the prawns with bacon or chicken sausages or even go for the OG meat-less option.

What it will cost you: Quality comes at a price at Rs. 550.

V. Tomato Cheese Macaroni - SodaBottleOpenerWalla

Where: Bandra Kurla Complex, Powai, Thane

Though you’re more likely to know the name for their speciality Parsi and Irani fare one of their little know secrets is their home-style mac ‘n’ cheese. They’ve kept it simple the way god intended but with a little more tomato and spices than the traditional recipe...ok, a lot more. But if you’ve eaten your way through a gluggy, cheesy mac and craved a little bite of something fresh, this is what you want.

What it will cost you: A mere Rs. 325 for a homely, filling meal that will leave you needing a nap.

VI. Mac ‘n’ Tikka - The American Joint

Where: Bandra Kurla Complex

Though their name suggests otherwise, this restaurant actually specialises in fusion cuisine and caters exclusively to vegans and vegetarians. Though they do have plenty of plain Jane American standards on the menu they love to jazz it up with a hit of desi fire. Their take on mac ‘n’ cheese is tailored perfectly to appeal to the Indian palate with a tikka masala gravy for when you’re overwhelmed with cheese.

What it will cost you: Well worth the experience at Rs. 329

VII. Truffle Mac ‘n’ Cheese - One Street Over

Where: Bandra West

Who says truffles have to be intimidating? This dish is the perfect way to ease your transition to gourmet dining without having to sacrifice on familiar comforts. Of course it wouldn’t be gourmet if there weren’t some additional features so this version contains 3 cheeses - chedder, parmesan and mozzarella, a truffle infused bechamel sauce and...well, macaroni. A spectacular take on the everyday.

What it will cost you: Perhaps this should be a bucket list kinda eat at Rs. 2,500.
