Bandra To Get An Exclusive Japanese-Korean Take-Out Spot

Bandra, you now have another reason to rejoice - the duo behind 425 Omakase are all set to open up an exclusive delivery and take-out kitchen serving up Japanese and Korean fare early next week. Ronak Nanda and Jahan Boch, who are famously known for their pop-up meals showcasing the extent of their creativity and experimentation, have decided to set up shop for a more continuous flow of business, if you will. We spoke to them about their newest venture, and what they have in store for us.

Known best for their gastronomique foray into Japanese and Korean cuisine, The Omakase Kitchen as it will be called is stepping up the bar a notch. When one conjures up the flavour that Japanese food carries with it, one instantly thinks of high umami and sushi sans doute. However, this venture is looking to change that up. “We want to explore and serve different dishes from this cuisine because there is so much more to Japanese Cuisine than just sushi. Our focus is more on Ramen and or rather the different styles of Ramen that are served in Japan” Jahan tells us. As for the Korean food, we’re keen on the Korean dumplings called Mandu, made with meat and kimchi, and the Korean Army stew. The menu also has a variety of artisanal breads and pastries to offer. “Initially we will be making traditional desserts from Japan like Mochi and Japanese Cheesecake. As the Japanese love French technique, we will be incorporating that with Japanese flavors for breads and pastries soon” Jahan says.

As far as techniques and process go, The Omakase Kitchen is attempting to do as much from scratch as possible. From making their own ramen noodles, spam and smoking and grinding their meat and flours, the chefs believe this is the only way to ensure quality control. “We are also using modernist techniques like sous vide. Our Tonkatsu Ramen has a 12 hour sous vide Pork Belly and all our Ramens have a sous vide egg” they explain.

The Omakase Kitchen is all set to open in Bandra on Waroda Road. The shutter reels up on the 8th of August, and their timings are from 11:30 am - 3:30 pm, and 6pm to 10:30 pm, closed on Mondays.
