
Eggs Kejriwal has long been a south Mumbai claim to fame through both, the legend of the man who valued his chili-egg-cheese-toast with a vehemence as well as the scrumptious dish that sports Devi Prasad Kejriwal’s namesake. But who would have guessed a Willington Sports Club patron’s favourite snack would be greedily munched on across the globe almost five decades later? One could see the dish was morphing into a Mumbai culinary stalwart with Bombay Canteen and The Nutcracker churning out their lip-smacking takes on the famous chili cheese toast. However, it seems Eggs Kejriwal has begun to charm the tastebuds of both America and the UK, as acclaimed chefs proudly offer a once little known dish to their customers.
Manhattan’s Paowalla, London’s Dishoom and Oakland’s Juhu Beach Club, are just a few joints getting rave reviews for their Eggs Kejriwal. The New York Times even named Paowallas’ version one of 2016’s best NYC dishes! The Telegraph too, is more than happy with Dishoom’s homage to Willington’s brunch special. Yet, despite the popularity of these international Eggs Kejriwal adaptations, the rendering of the dish is a bit different. The original Eggs Kejriwal is known for being a simple creation, made up of a buttery slice of toast, a poached or fried egg, processed cheese and a healthy smattering of chillis.
The global varieties of Eggs Kejriwal are still simple dishes, although, they commonly call for the use of mature cheddar, use large brown eggs for a more dominant yolk in their sunny side up (as opposed to poached or fried eggs), as well as fancier bread, such as bloomer bread, which has a crustier loaf. Although the recipes don’t really change aside from the aforementioned differences, instead of garnishing the snack with sliced chilis, Paowalla drizzles a green chili chutney on their base, while Dishoom uses spring onions to add a bit of crunch to the dish.
