From Punjab’s chole bhature and Rajasthan’s dal bati to Tamil Nadu’s appams and Maharashtra’s misal pav, India’s culinary diversity is nothing short of an enigma. Our flavours are many and our dishes come in all shapes and sizes (even colours, actually). But to be able to bring it all on one platter is a Herculean task like no other. However, Mumbai’s own—The Bombay Canteen, has been trying to bring the best of regional cooking to our doorstep for almost three years now. From their exclusive Assamese menu to their Bengali pop-up and their recent Independence Day charity feast, we’ve seen Chef Thomas cook up mouthwatering delicacies every time. Yet somehow we can’t get enough of it.

In the spirit of Eid al-Adha this year, The Bombay Canteen has decided to celebrate the “festival of sacrifice” in their own unique and fun way by hosting a community-style dinner that will incorporate a goat in its entirety. Their second nose-to-tail dinner ever (the first one was held in September 2015) will be held on the coming Sunday, 19th August. For the uninformed, a nose-to-tail dinner is one where every part of an animal’s body is cooked in a unique way and served fresh and hot for people to gorge. No part is spared while cooking or eating, thereby minimising waste.

The Bombay Canteen’s Sunday menu will be an offering of a dozen goat dishes, like Smoked Boti Samosa with Green Pea Salad and Shikampuri Gurda Kebab, inspired from regional recipes of 12 different communities across India. From Rajasthani Ghosht to the goat’s tripe cooked in the authentic Mangalorean way, ‘The Canteen Nose-To-Tail Feast’ is the ultimate tribute to the culinary extravaganza that remains hidden in the non-urban pockets of our country.
