A great example of this is the latest edition of The Hood by Olive’s ‘Night Shift’ series of takeovers, where Chef Tori Macdonald will stage a one-night takeover on Sunday, 26 July, from 7 pm onwards.

Tucked away at the end of Wood Street, The Hood was conceived by AD Singh of the Olive Group of Restaurants and Chef Dhruv Oberoi as a meeting point for the flavours and rituals of neighbourhoods around the world.

Chef Tori’s takeover narrows that broad idea into a concise, indulgent three-dish offering. The menu looks to Canadian comfort food as a fitting counterpoint to the city’s ongoing appetite for globally inspired, experience-led dining.

The meal opens with Perogies: potato-and-cheese dumplings pan-fried until crisp, topped with caramelised onions and served with sour cream; followed by Poutine, Canada’s famously unfussy late-night staple, built around crisp fried potatoes, cheese curds, and brown gravy. Dessert takes a more maximalist turn with a Jameson Whiskey Bacon Chocolate Tart, combining dark chocolate and Irish whiskey with smoky candied bacon.
