Goa’s Boilermaker will take over the bar, while chef Lakhan Jethani brings Mizu Izakaya’s Japanese cooking shaped by ingredients from Goa. The line-up also features DJ sets, a vinyl collective set by Doris, The Art Curry’s screen-printing station and an ’80s-themed gaming arcade.

One Night in Toki-O started as a way of exploring contemporary Japanese culture through food, drinks, music, art and games, with each edition adapting the idea to its city. Previous editions in Bengaluru and Delhi have brought together Japanese food pop-ups, vinyl-led DJ sets, creative workshops, retro gaming and other cultural references, moving between older Japanese traditions and the things shaping the culture now. The series returns this year across Bengaluru, Hyderabad and Mumbai, with the Hyderabad edition landing at Katha Crafthouse on September 12. At its centre are two food and drink takeovers from Goa that bring very different perspectives to the evening.

Boilermaker, the Siolim bar founded by brewer Nakul Bhonsle and mixologist Pankaj Balachandran, is taking over the bar with a selection of cocktails from its new menu. The bar draws from the beach shacks and neighbourhood drinking culture of old Goa, pairing craft beer, cocktails and Goan bar food in an open-air setting. Its drinks often put unexpected ingredients and combinations alongside spirits and beer, while its signature boilermaker gives the traditional whisky-and-beer pairing a Goan spin with versions featuring cashew feni. That combination of brewing and cocktail culture has taken the bar well beyond Goa: Boilermaker is currently No. 8 on Asia’s 50 Best Bars 2026 list and was named The Best Bar in India this year.

Food comes from Mizu Izakaya and chef Lakhan Jethani, whose work with Japanese cuisine began with training and professional experience in Japan. At Mizu’s Goa outpost, Jethani uses Japanese techniques with ingredients sourced from the region, working with chonak, teesrya, coconut, kokum and local seaweed alongside methods such as hibachi grilling, fermentation and Japanese-style seasoning. That relationship between Japanese cooking and Goan produce runs through the menu, giving Jethani room to rethink how an izakaya can work in a place with a completely different pantry. For Hyderabad, he is bringing the Mizu Izakaya experience for a one-night menu.

For music, Bangalore-based DJ duo Answer (Arjun Nair and Nishanth Naidu) brings club-focused sets alongside Hyderabad DJ Doris, who covers deep, minimal, and hypnotic house. With Japanese-inspired food, cocktails, music, screen printing by The Art Curry and an 80s arcade game, One Night in Toki-O offers Bengaluru an evening shaped by the many ways Japanese culture continues to inspire creative communities across the world.
