However, in 2022 this seems to be a reality, with multiple restaurants and cafes indulging in the art of conscious and zero-waste cooking. Providing the right dose of health and rich flavours at the same time, their menus indulge in a wide variety of dishes from around the world.

Offering food that does not overburden your body with heavy oils and preservatives, these eateries are changing the culture of food by utilising healthier ingredients. I. Greenr Cafe

A conscious and community oriented space, Greenr Cafe is an experiential cafe. The no fuss plant-based joint is also a great co-working space as the quaint ambience makes for the perfect set up. Focussed on nutritive elements and non-processed vegan options, their menu is vast and dabbles in cuisines from around the world. Additionally the dishes are super light and are not overwhelmed with unnecessary spices. The Himalayan Amarnath Salad and Gluten-free Buckwheat Gnocchi pasta are my favourite picks from their innovative menu.

II. People of Tomorrow

This 100% vegan restaurant in Chhatarpur has an artisanal, artistic and sustainable take on food. People of Tomorrow has a pleasant ambience that combines rustic interiors with minimalism. The most interesting fact about their restaurant is that the conscious values are evidently stated in their set up and are not restricted to empty claims. Intentional of their kitchen practices, the innovative chefs have made sure that there is no single-use plastic involved in the cooking process, even in the matters of food storage. The dishes are well plated with micro-greens and home-made condiments. The taste is not overbearing but provides one with an authentic plant based experience.

III. Cafe Turtle

Delhi’s iconic Cafe Turtle shares space with an independent, family run bookstore called Full Circle. A quaint plant based restaurant located in the heart of Delhi, in Khan Market, Greater Kailash and Nizamuddin East is the perfect place to indulge in leisure. Breaking away from our generally fast paced lives, such cafes invite you for a slow experience. While their interiors set up with books is calming enough, they take it a step forward with vegan options that are consciously cooked. A relaxed rooftop eatery, Roadhouse Cafe serves delicious platters of vegan and gluten-free options. They are known for their famous vegan pizza and a pleasing environment. It is a meeting point for gigs and other events with performances by young artists.
