As they sat together, and enjoyed their meal surrounded by warmth and community, a question resurfaced in their minds: why had halwa, something so central to South Asian celebrations and joy, remained largely unchanged for centuries? 

That question transformed their kitchen into an experimentation ground. Through a tedious process of trial and reinvention, where the familiar semolina-based dessert began to take on unexpected forms, they found a middle ground where, instead of treating tradition as something rigid, they approached it as a foundation. Soon, halwa found itself appearing in surprising places, folded into cookies, croissants, pies and even ice cream. 

Yet at its core, Halwa NYC isn’t about novelty for the sake of novelty. The couple’s approach remains rooted in the craft of halwai cooking: slow-stirred halwa made in small batches, using high-quality ingredients and fragrant spices, cooked patiently to develop the deep textures and flavours the dessert has always been known for.
